Whole30 Western Frittata
A Whole30 western frittata filled with red onion, green bell pepper, and diced ham in every bite! This crustless quiche-style breakfast is hearty and whole!
oven safe skillet
- 1 tablespoon ghee
- 1/2 cup red onion diced
- 1/2 cupe green bell pepper diced
- 1/2 cup diced ham
- 8 eggs
- 1/2 cup full fat coconut milk
- 1 teaspoon nutritional yeast
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Preheat oven to "broil".
In an oven safe skillet, warm ghee on medium-high heat. Add onion and bell pepper. Cook until the raw edge is off, about 3-4 minutes. Reduce the heat to low and add the ham.
In a mixing bowl, whisk together eggs, coconut milk, nutritional yeast, salt, and pepper. Pour into the skillet. Without stirring, cook skillet for 4-5 minutes.
Transfer skillet to the oven's middle rack and cook for 3-4 minutes, or until the entire skillet is firm and the eggs on top are no longer liquid.
