When Caleb left in November, I really embarrassed the art of cooking for one. With him gone, I was able to bring broccoli back into my life (🙌🏼) and I went to town on protein options. Specifically, individual vacuumed sealed fish! With him away again, we're back to those meals and I'm not going to lie... I can handle it. • Swordfish has become my favorite and it's even better with this Asian flare! Which has FINALLY made its way over to the blog calendar. • What's for dinner tonight?
Definitely from last night, definitely ate more than half before thinking to snap it, and definitely wishing I was eating it now. • Houston friends! Reaching back into the archives to bring you one of my favorite grilling appetizers for a crowd. They're sweet, they're spicy, and they're totally worth getting out the food processor (and cleaning it) for. • Friends, we are roughly 80 days away from college ball (specifically, Michigan Football) and to say I've been daydreaming would be... an understatement. • So, until then, we shall hangout by the pool and devour these Plantain Stuffed Jalapeño Poppers. I only have 2 breakfast's left until I get to hear my sweet husband's voice and I most definitely am NOT keeping it together. However, these skillet potatoes are totally soaking up the tears! #Dramatic • Last weekend, I boiled a bunch of potatoes for a salad I tested out for the blog and ended up having a few leftover. I popped those babies in the fridge and used them for breakfast this week. • Dice the potatoes to your preference and warm them up in a heated skillet with about 1/2 tablespoon of fat. I seasoned them with chives, onion powder, salt, and pepper. Not much is better than ranch style breakfast potatoes dipped in the yolk of could-have-been chickens. • I hope you have the best day!
