What’s for lunch tomorrow? As you know, I love an easy recipe that looks difficult. This #Whole30 Orange Chicken has been the most popular recipe on @Wholesome_joy since September!

Therefore, out with taco Tuesday and in with the takeout (and Christmas movies 🙋🏻‍♀️)! Join me tonight, in my stories, while I turn this easy orange chicken into an orange chicken stir fry! To follow along, here’s what you’ll need!

1 teaspoon olive oil
2 1/2 pounds boneless, skinless, chicken thighs
2, 12 ounce bags, stir fry frozen vegetable
1 teaspoon ghee or grass-fed butter
1/2 teaspoon sesame oil
1/2 cup coconut aminos
1/4 cup fresh orange juice
1 teaspoon red wine vinegar
1/4 teaspoon garlic powder
1/4 teaspoon sea salt
1 teaspoon orange zest
1 teaspoon arrowroot starch
1 teaspoon water
1 teaspoon sesame seeds, optional

I’ll see you tonight! ... I may, or may not, totally be in my pj’s. 🤪 Chipotle bowls always save me when I kick off the week unprepared!

Carnitas, extra veggies, 2 spoons pico, 2 spoons hot salsa, lettuce, and the guac on zaaa side (because I’m convinced that’s how to get exactly what I’m paying for).

How do you chipotle? 🤤 Days, chances, mornings, dinners, showers, runs... the list can go on.

68 days (beginning now) to finish that goal you have. Whether it be weight (go away you 12 pounds), financial (it’s just you and me now student loans), or even relationships (I will make a new real life friend!), think about where you can be in 68 days if you begin working towards that goal you made to yourself this year (or last... or 4 years ago) now.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I’ll let you in on a whittle obvious secret of mine: These last 12 pounds are NOT going to lose themselves and those November and December 5k’s I’ve signed us up for happen with or without me. Oh, oh, and and.. literally life will continue and I’ll be just annoyed with myself in a year than I am now if I do nothing or worst, quit.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I once had an older and wiser classmate tell us crying college sophomores “it’s 15 weeks. I’ve been married for 36 years and birthed/raised 4 babies. We can DO 15 weeks of homework and exams”. I like to remember that analogy when I’m deep in the “I CANT DO IT” thoughts because {whoa} I’ve done a lot of things longer than the time it will take for me to reach these goals.

The things I’ve done longer than 68 days?
- 1,095 days of marriage
- 2,385 days of college (but I finished)
- 445 days of flight school separation (me in TX, Caleb in AL)
- 375 days (and counting) of budgeting, paying, and planning (#DebtFreeJourney)
- 180 aggregate Whole30 days (have you ever combined all your rounds or days together? Talk about motivation!)

68?
