I’ve got to tell ya, prepping proteins for the week is what keeps me going. . Last night in my stories, I talked about one of my favorite chicken marinades, my Husband’s Rocking Paleo Chicken (yep, I finally got that name right!) and it got me really thinking about how far my “meal prepping” game has come. From individual containers to bulk prepped items, my Sundays (and weeks) have never been easier. Prepping protein to throw into a quick vegetable side has become my favorite way of eating. . This week’s protein includes “rocking chicken” and southwestern grilled shrimp. I’m still kicking back with my spring time berry salads so it’s been even easier lately! . What’a on your menu this week!?
If you’ve been with me for a hot minute, you know that I LOVE my adult beverages. I was one of those weird kids that was too terrified to drink prior to legal age so when it finally came, I went crazy. Not “DWI, college party madness, black out” crazy but more “OH MY GOSH, I want to kiss your cheek and have all of the flaming Dr. Pepper’s in the wooorrrlld” crazy. . These days, nearing 28 and all, I still love my beverages, but I find those “sweet moments” to drink them. Which is just code for “what? 3 Blue Moons on a Tuesday is frowned upon?” . So, why I told you all of that, I don’t know. BUT I’m loving this Corona like no one’s business and drinks by the pool equates to family times so, LIFE MADE. . Second thoughts: it’s pool season, Texans. Don’t forget to vacuum, scrub, and shock those bad boys! Let’s get swimming!
Roast and potatoes is good but roast and mashed cauliflower is great. . Prepping lots of goodies today for the week and blog! Heading into the third week of our family weight loss challenge and so far, we are 37.8 pounds lighter, people! Happy Sunday!
