When it comes to chicken, it’s either really tasty, or really not. For years I overlooked chicken thighs in thought that they were the less than best decision for you.
Man, was I wrong.
I also thought they weren’t “as tasty as the breast”.
Man, was I even more wrong!
Chicken thighs are the dark meat of the bird, and while they make up for the lack of fat in the breast, they are packed with 28 grams of protein per the average skinless thigh.
Last year Caleb and I hosted a pool day and while shopping for the perfect package of fajita meat, we were disappointed in our delayed search. Note to all of you sweet souls: If you’re planning fajitas in Texas, plan ahead and get there when the doors open.
Panicked, we brainstormed in the aisle and landed on $1.99/ pound thicken thighs and a few packages of burger patties. I remember looking at Caleb in judgment saying “do people actually eat these?”
Caleb laughed and when we made it home, he pulled out a gallon size bag, popped those little thighs in, added coconut aminos, garlic, and seasoning. He let them marinate all day before taking them out to grill and ever since, I’ve been hooked.
Hooked on the thighs, and hooked on this marinade.
Rocking Paleo Chicken Marinade
Perfect chicken marinade for summer nights on the deck, parking lot tailgates, or a simple Sunday night family dinner.
- 1-2 pounds boneless, skinless, chicken thighs
- 1/2 cup coconut aminos
- 1 tablespoon minced garlic
- 1 teaspoon onion powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- In a large zip lock bag, combine all ingredients.
- Seal and rotate to ensure marinade evenly coats all chicken.
- Refrigerate for at least 3 hours prior to grilling.
